3264 and All That: A Second Course in Algebraic Geometry by David Eisenbud (Author), Joe Harris (Author) is, I think, a good introduction, motivated by many examples and applications in geometry. Schubert calculus is not its only focus, but it explains pretty well why it was developed and how to use it in enumerative geometry.
